Serving guidelines and other tidbits

Things to consider when planning how much food to serve a crowd

• People always take more when they serve themselves – increase your total by 10%.
• If serving all men, increase your total by 10%.
• Generally plan on having 1# of food for each adult and 1/2# for each child.
• It’s better to have too much than not enough.

Shredded Roast Beef or Pulled Pork 

• Shredded Roast Beef or Pulled Pork is a great way to feed a crowd.  Simply heat and serve with our many options of BBQ Sauce.
• We estimate 5 sandwiches per pound.
• The Shredded Roast Beef and Pulled Pork are frozen in approximately 2.5# and 5# packages.  Allow a minimum of 2 days to thaw in the refrigerator.  Open the package when thawing.

Deli Meats (ham, turkey, roast beef, etc.)

• You should be able to make 10-12 small buns per pound of deli meat.

Side Dishes (potato salad, baked beans, coleslaw, etc.)

• Take into consideration how much other food you are serving.
• Generally, 3 to 4 servings per pound (3 to 4 servings per pint) is a good rule of thumb.

Meat

• 1/3# per person

Ribs

• 1 to 1.5 # per person to accommodate the bone.

Meat & Cheese Trays

• We make meat and cheese trays to order.  Please call ahead.
• We offer a small tray which is 12″ in diameter and serves 12-15 people.  You get a choice of 2 meats and 2 cheeses.
• We offer a large tray which is 16″ in diameter and serves 25-30 people.  You get a choice of 4 meats and 4 cheeses.

How many slices are in a stick of summer sausage?

• The number of slices depends on the thickness of the slices.  The following are estimates.
• Small Stick (1.5#) – approximately 75 slices
• Medium Stick (2.0#) – approximately 100 slices
• Large Stick (2.5#) – approximately 125 slices

How many slices are in a pound of cheese?

• The number of slices depends on the thickness of the slices.  The following are estimates.
• Most cheeses – approximately 22-24 slices
• Havarti – approximately 11-12 slices

How much cheese do I need with a pound of sausage?

• Typically 1# of sausage to 1/2# of cheese.

How to make a summer sausage flower.

Making a flower out of summer sausage for your charcuterie board or serving tray is really easy.  Follow the steps below.

Step one:  Start with a clean wine glass, approximately 20 slices of summer sausage and clean hands.

Step two:  Overlap the slices of summer sausage on the rim of the wine glass.

Step three:  Continue overlapping the summer sausage until the center is filled in.

Step four:  Carefully flip the wine glass over placing the flower in the desired location on your charcuterie board or platter.

Step five: Remove the glass to reveal your summer sausage flower.
